Strawberry Banana Oatmeal

Start your day right with this simple and delicious Strawberry Banana Oatmeal. A healthy, vegan breakfast that will have you energized and ready for whatever the day will bring. It is ready in just 10 minutes and requires only one bowl. Easy, peasy and delicious!

Strawberry Banana Oatmeal served in a bowl topped with fresh berries and almonds.

Naturally sweetened with strawberries and banana, this oatmeal for one is full of flavor but not overly sweet. If you like it sweeter, you can top it with a little chia jam or maple syrup.

Ingredients:

  • Frozen strawberries, you could also use fresh strawberries. If you do, clean, husk them and cut in pieces. Then follow the instructions. The oatmeal won’t have the same bright pink color with fresh strawberries, but the flavour will be the same.
  • Quick cooking oats, this oatmeal recipe is made in the microwave for a quick and easy breakfast. quick cooking oats works best in this breakfast, I don’t recommend using other kinds of oats since they have longer cooking time.
  • Water
  • Milk, I love to use almond milk, it is my favourite when cooking and baking vegan. You can use any milk of your choice, for non vegan, use normal milk.
  • Banana, very ripe and mashed. This is the only sweetener in this oatmeal so make sure your banana is very ripe, you want those brown spots!
  • Vanilla extract, for a hint of vanilla that just makes everything taste better.
  • Pinch of salt, to balance the flavours.
Strawberry Banana Oatmeal

Instructions

Start by placing the strawberries microwave safe bowl. Microwave on high for 3-4 minutes until they and soft. Mash the strawberries with a fork. 

Stir in the rest of the ingredients to the bowl.  It will look lumpy but don’t worry, it will all come together after it is cooked.

Microwave on high for 3-4 minutes, watching so it doesn’t boil over. (Microwave times will vary depending on wattage.)

Stir and let sit for 1 minute. If you think it is too thick, simply add a little more almond milk or water. Top with your favorite fruit, berries or chia jam and enjoy!

Oatmeal Toppings:

  • Strawberry chia jam
  • Fresh strawberries or other berries of choice
  • Chopped nuts, like almonds or walnuts
  • Chocolate chips
  • Nut butter
  • Maple syrup

Ingredients
  • ½ cup small handful frozen strawberries
  • ½ cup quick cooking oats (porridge oats)
  • ½ cup water
  • ½ cup milk of your choice
  • ½ very ripe banana, mashed
  • ¼ teaspoon vanilla extract
  • pinch of salt
  • fruit or berries for topping optional
