This Healthy Breakfast Apple Crumble is the perfect easy meal prep breakfast or healthy dessert. Served for breakfast with a little yoghurt and a drizzle of maple syrup, or for dessert a scoop of vanilla ice cream. This apple crumble is a healthy take on the classic, also vegan, gluten free and refined sugar free.

Since I was little, I have always loved an apple crumble for dessert. The soft, sweet apples, the crunch of the cinnamon and the warming cinnamon. What is not to love?? Well, all the calories…. That’s why you can enjoy this healthier version of the classic apple crumble. Healthy enough to be served for breakfast just like these Apple pie baked oats or this Apple Pie Smoothie recipe.

Ingredients

This Vegan apple crumble recipe is really easy to make, all you need are a few basic ingredients. It makes a great meal-prep for the whole week.

  • Apples, use a sweet variety since we aren’t adding a lot of sugar. Gala is a good option.
  • Cinnamon, the all important warming spice that goes so well with the apples.
  • Rolled oats, use certified gluten free oats if needed.
  • Almond flour, or almond meal.
  • Pecans, or chopped nuts of choice for a little added crunch and protein.
  • Coconut oil, or butter can also be used.
  • Maple syrup, adds a great flavor and sweetness to both the filling and crumble topping. Other liquid sweetener, brown sugar or coconut sugar can also be used.

Instructions

Breakfast apple crisp is really fast and easy to make. Just follow along with the step-by-step photos below.

  1. Step 1: In a mixing bowl, stir together the peeled and chopped apples with the cinnamon and maple syrup until the apples are well coated. Add the filling to the prepared baking pan.

  1. Step 2: Add all the ingredients for the streusel to the mixing bowl. Stir together well with a spoon or use your fingers to pinch everything together.

  1. Step 3: Top the apples with the crumble.

  1. Step 4: Bake until golden brown and the apples are soft. If the crumble starts getting dark, cover it loosely with some foil.

Serve with a little vanilla yoghurt for breakfast and an optional drizzle of maple syrup if you like it sweeter. It can also be served as a healthy dessert with a scoop of ice cream.

Substitutions and Variations

  • Nuts – this apple oatmeal crumble uses pecans, but any nut of your choice works.
  • Protein – For an extra boost of protein, mix in 1 tablespoon of protein powder into the streusel topping. You might have to add a little extra melted coconut oil if the topping is too dry.
  • Gluten-free – Oats are naturally gluten-free, but can contain traces of gluten. To ensure this apple pie crumble is gluten-free, only use certified gluten-free oats. 
  • Nut free – To make this an allergy friendly apple crumble, replace the chopped nuts with some seeds like sunflower seeds and the almond flour with ¼ cup all purpose flour.
  • Oil – Instead of the coconut oil, butter also works. Use 2-4 tablespoons of melted butter.
  • Sweetener – Brown sugar or coconut sugar are other great alternatives to the maple syrup. Add more if you like a sweeter breakfast.

Storage

If you have any leftovers of this Apple Cinnamon Oatmeal Crumble, you can store them in an airtight container in the fridge for up to 3-4 days. Reheat a portion of the leftovers in the microwave until warm and top with some yoghurt before serving.

The breakfast crumble also freezes well, pack in freezer friendly container and then let defrost and reheat before serving. Can be frozen for up to 3 months.

Ingredients
Apple filling
  • 4 sweet apples, peeled and chopped
  • 1 tablespoon pure maple syrup
  • 1 teaspoon ground cinnamon
The streusel topping
  • 1 cup rolled oats
  • ½ cup almond flour
  • ¼ cup chopped pecans, or nuts of choice
  • 2 tablespoons coconut oil, melted (or butter)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • pinch of salt
Instructions
  1. Preheat the oven to 350F (175C) and lightly grease a 8×8 baking dish.

  1. In a mixing bowl, stir together the peeled and chopped apples with the cinnamon and maple syrup until the apples are well coated. Add the filling to the prepared baking pan.

The streusel topping
  1. Add all the ingredients for the streusel to the mixing bowl. Stir together well with a spoon or use your fingers to pinch everything together.

  2. Topp the apples with the crumble and bake for about 40 minutes to golden brown and the apples are nice and soft. If the crumble starts getting dark, cover it loosely with some foil.

  3. I like to serve with a little vanilla yoghurt, if you are having this as dessert, a scoop of ice cream is also really good.
