Healthy Beet and Blood Orange Smoothie

A creamy and delicious start to your day. This Healthy Beet and Blood Orange Smoothie is packed healthy ingredients as well as oats and chia seeds to keep you full longer.

Ingredients:

  • Oats
  • Chia seeds
  • Bananas
  • Blood oranges, peeled and slices, seeds removed
  • Yoghurt, preferably with a thick consistency 
  • Almond milk
  • Beet powder or ½ beet, peeled and chopped 
  • Ice
  • optional, maple syrup

Instructions:

  1. Start by adding the oats and chia seeds to a high speed blender. Blend until the oats have a corse sand consistency. Then add the rest of the ingredients except for the beet and the ice. start with half the milk and then add more as needed. 
  2. Mix until it has a smooth consistency, then add the ice and extra almond milk if needed. Taste and add maple syrup if desired.
  3. Pour half the smoothie in 1 large, or 2 smaller glasses. Add the beet or beet powder to the remaining smoothie and mix until fully incorporated. Pour on top of the first layer and serve immediately. Enjoy!

Substitutions:

  • Blood oranges, Can be substituted with normal oranges or mandarine oranges.
  • Almond milk, use any kind of plant based milk to keep this smoothie vegan. Or normal milk for non vegan.
  • Yoghurt, I use a Greek style, thicker plant based yogurt that is unsweetened. Use your favourite! For non vegan, normal greek yogurt is a great option.
  • Oats, because the oats are blended you can use any types of oats in this recipe. I normally use rolled oats or quick cooking oats because that’s what I normally have at home.
  • Beet powder, can easily be substituted with a normal beet. It can be raw or cooked but it has to be peeled!

Top tips:

Use Very ripe bananas, the riper the better! This adds sweetness, and the texture of a ripe banana is smooth and creamy compared with the hard and starchy green banana. So you want those brown spots!

If you like your smoothie on the sweeter side, add a little maple syrup at the end.

To get this layered effect, like in the photo, I first poured half the glass with the blood orange smoothie. Then I added half the beet powder, poured another layer with half the remaining smoothie. Then I added the remaining beet powder to the top of the smoothie for an extra kick of color and flavour . You can also make only two layers, OR mix the beet root in to start with. The flavour will be the same but it won’t have the layered effect.

Storing smoothies:

Smoothies are generally best directly when they are made. But you can also keep any leftovers or make a double batch for the next day.

My top tips for keeping a smoothie fresh for longer is to store it in a glass container with an airtight lid. Also important is to fill the container to the very top! This will prevent air to enter and with that unwanted oxidation that will affect the nutrients and also the color of your smoothies. Since this smoothie contains banana, it will go a little brown when stored. Another option is to add a squeeze of lemon juice to your smoothie, this will help keep it fresh and tasty for the next day.

Generally, smoothies keep for 1-2 days in the fridge if stored correctly. Always smell it to make sure it is still fresh before drinking.

Ingredients
  • ½ cup oats
  • 2 tablespoon chia seeds
  • 2 bananas
  • 2 blood oranges, peeled and slices, seeds removed
  • ½ cup yoghurt of your choice, preferably with a thick consistency
  • ½-1 cup almond milk
  • 1 tablespoon beet powder or ½ beet, peeled and chopped
  • ice
  • optional, maple syrup for sweetning

    Hi there. If using fresh beets, do we need to boil/cook it first?

      Hi Fatima,
      You can use raw beets, just peel and chop it up in small pieces.
