This Honey Roasted Peach Toast recipe makes a great sweet breakfast or snack. The peaches are slowly roasted in the oven with a little honey that brings out their natural sweetness.

I love peaches when they are in season, so sweet and juicy. Peaches are full of health benefits. A great source of fiber, potassium and vitamins A and C. They are also low in calories and full of natural sweetness and make a great topping instead of jam for this peach toast recipe. Another great peach recipe to try is this Peach baked oatmeal that is great for meal prep and loaded with sweet peach flavor. Ingredients

This peaches and cream toast is fast and easy to make. All that is needed are a few ingredients listed below.

  • Peaches, choose a ripe and juicy peach.
  • Honey, can also be substituted with maple syrup for a vegan recipe.
  • Greek yoghurt, a thick variety that is full fat and unsweetened. To make this toast vegan, use a vegan greek style yogurt.
  • Black berries, for a contrast in flavour and colour. You can also substitute for blueberries.
  • Slivered almonds, can be substituted with pecans, walnuts or pistachios. If you are allergic to nuts some crunchy seeds or granola can also be added instead of the nuts. Try this homemade Healthy Pecan Granola for a great added crunch.
  • Bread, toast 2 slices of your favourite bread. Store bought or homemade like this No knead oatmeal bread or this Easy No Knead Artisan Bread.

Instructions

  1. Slice the peaches in half and remove the pips. Place cut side up in the baking dish. Drizzle with honey or maple syrup, and bake in the oven for about 20-25 minutes until soft and can easily be pierced with a fork. The time depends on the ripeness and size of the peaches.
  2. Toast the bread, top with yoghurt, slices of the roasted peaches, blackberries and almonds. Drizzle with a little honey or maple syrup for serving.

Substitutions and variations

  • Peaches – they are the star of this toast! There are so many great varieties of peaches, use your flavorist and adjust the bake time according to the size of the peach. Other stone fruit like nectarines and apricots can also be used.
  • Cinnamon, top the toast with a dusting of some warming ground cinnamon. This will add a a lot of flavor that pairs great with the peaches. 
  • Nuts – the toast tastes great topped with some crunchy almonds. But other nuts like pecans or walnuts are also a great choice. For allergies, leave the nuts out or use sunflower or pumpkin seeds. 
  • Yoghurt – Instead of using yoghurt, cream cheese is another great option.
  • Sweetener – instead of honey, other liquid sweetener like maple syrup, agave syrup or brown sugar can also be used. If you like a sweeter dish, add more sweetener to taste.
  • Vegan – for a vegan peach toast, use maple syrup and a plant based greek style yoghurt.
  • Gluten-free – use a certified gluten free bread.
  • Berries – Some fresh blackberries or blueberries and a great flavor with the peaches. this is totally optional and can be left out.

How to pick a ripe peach?

Follow your nose, a sweet-smelling peach is usually ripe and juicy, full of flavour.

Sometimes all you can get in the produce section are very firm peaches that aren’t really pipe. No problem, just leave them out on the counter for a few days. Until they are a little softer and sweet smelling. When your peaches are ripe, store them in the fridge to slow down the ripening process and keep them fresh for longer.

Storage

The assembled peach toast tastes best when eaten straight away, otherwise it risks going soggy. But if you have leftover peaches, they can be stored in an airtight container in the fridge for 3-4 days. Eat the leftover peaches cold or heat them in the microwave.

I love peaches when they are in season, so sweet and juicy. No need to add a lot to them, the can shine on their own. This recipe comes together easily and quickly.
Servings: 4 servings
Ingredients
  • 2 peaches, ripe
  • 1 tablespoon honey or maple syrup, and more for serving
  • 4 tablespoon greek yoghurt, natural and preferably full fat
  • 8 Black berries or a handful of blueberries
  • 2 tablespoon Slivered almonds, toasted
  • 2 slices bread, choose your favourite
Instructions
  1. Preheat the oven to 425F (220C) Line a 8×8 (20×20 cm) baking dish with parchment paper for easy cleanup.
